Noblemold, Noblerot

Common name for a fungus that attacks grapes be­neficially to produce a flavor in the wine. Technical name is Botrytis Cinerea. It attacks grapes causing a loss of mois­ture and a concentration of sugar that in­creases the intensity of flavor. Commonly sought in dessert wines. A negative in red wines.
