Botrytis Cinerea “Grapes Like Ashes”
This is a type of fungus that attacks the grape. It usually happens in the transition from moisture to hot weather. These causes the grapes to have concentrated sugars and acids, which makes the wines very sweet and have longevity. Some examples of wines that require Botrytis are the Barsac and the Sauternes.
