Botrytis Cinera

A mold which can occur normally, though sometimes it is induced, which pierces the skin of the grape causing dehydration and concentrates the sugar. This is done without leaving any “moldy” side effects and adding a richness with hints of apricots and peaches. Very desirable for making dessert wines from White Riesling and Sauvignon Blanc.
